Some of the best coffees we’ve ever tasted come from this type of processing - a short anaerobic phase followed by traditional washing. You get the best of both worlds - bigger, richer fruit flavors from the anaerobic fermentation, but none of the funk. This is a new producer for us, but of course we have featured many Chirosos from Urrao. This is one of the very best! The acidity really pops on this one and we taste juicy blood orange, grapefruit, and flowers.

Medium Roast

PERU

This is the perfect coffee for those of you who don’t want the bitterness of darker roasts but also don’t want a particularly fruit-forward flavor profile. This particular coffee comes from a cooperative of smallholder women farmers that also distribute loans and work on projects to improve the livelihoods of all their members. Although we are not USDA-certified, this coffee is 100% organic thanks to the traditional growing practices in the region. We taste notes of milk chocolate, toffee, nougat, and a hint of apricot too. Honestly, what more could you ask for from a medium roast?

This stellar Pink Bourbon won the Huila Mágico competition in 2023 - need we say more? Sadly that competition hasn’t been run in a few years, but we are confident that if it had been, this coffee would have been up on the podium again. As is the case with all great Pink Bourbons, there is a lot of acidity that is balanced out by a lot of sweetness, with just a little hint of savoriness. We taste juicy heirloom tomato, grapefruit, peach, lemon, and orange blossom in this truly delightful coffee.

Laayyoo Natural has been a staple on our menu for the past six years and we’re thrilled to have it back again. This coffee is bright and sweet with notes of mango juice, peach pie, blueberry, and strawberry fruit roll-up.

The high altitude, fertile soil, ancient heirloom varieties, and the generational agricultural expertise in Guji combine to produce a truly special coffee. We absolutely LOVE when a washed Ethiopian coffee has this magical lemon-lime kind of flavor profile with an almost effervescent texture, like soda. Does it remind you of Sprite? It sure does for us! Mulish is a new washing station for us and we are thrilled to be able to share this one with you.

Staple - Light Roast

COLOMBIA

We’ve raised the bar on decaf coffee! This is a fully washed, EA Sugarcane decaf from one of our favorite growing regions in Colombia - you may recognize “El Nevado del Huila” as we often have the caffeinated version as a single origin offering. It tastes about as close to the real deal as you can possibly get: there’s great sweetness and a balanced acidity. Enjoy!
