This one’s a zinger! In the cup, we taste some really wonderful, bright, juicy flavors, including blackberry, black currant, raspberry, lemon, and lime. The lemon-lime combo made us think of Sprite at one point during one of our sample cuppings. And the lime note is just so sweet that it’s really more like limeade - not a harsh lime. It’s just a fantastic example of how good a washed Pink Bourbon from Huila can be.

Why We Love This Roast

There’s really no other way to put it: Colombian Pink Bourbons have stolen our hearts time and time again with their super bright, fruity, and sweet profiles. This one, from Anayibe Ortíz, a 50-year-old, second-generation coffee grower, is no exception. We taste an intense but soft lemon-lime acidity plus notes of blackberry, black currant, and raspberry. What contributes to the fantastic flavor of this coffee besides the Pink Bourbon’s Ethiopian genetics? Huila is of course an amazing region for high quality coffee production, but the processing is also supremely important. Anayibe performs more or less the same processing technique on all of her coffees: whole cherry goes into plastic bags to ferment for 24 hours, followed by de-pulping, then the parchment undergoes an additional 36 hours fermentation in bags before washing and 17-20 days drying on raised beds, depending on environmental conditions. 

Anayibe has been a coffee producer since she was 15 years old. While she inherited Finca El Roble in El Mesón, Pitalito, Huila from her parents, she was not content to just run their old farm - she recently acquired two additional farms, Finca La Loma and Finca El Triunfo. Three out of the four hectares that make up Finca El Roble are dedicated to growing coffee. The approximately 15,000 coffee trees are Pink Bourbon, Caturrón, and Colombia varieties - this lot is 100% Pink Bourbon. As she was when her parents ran Finca El Roble, her children are involved in picking, processing, and farm maintenance. The farm also grows corn, plantains, and lentils to avoid soil erosion and provide financial diversification. We look forward to tasting more coffees from Anayibe in the future!
