This limited edition Pacamara micro lot tastes like some serious tropical fruit juice. We are also tasting some mild savory notes (often found in Pacamaras) which add complexity to the ever-evolving flavor profile of this wonderful coffee. We really can't recommend this one highly enough if you are a fan of bright African coffees.
Hubert Nicolás is a fourth generation farmer growing exceptional coffee near the village of El Aguacatal in San Jose, Honduras. His farm, Finca El Tatascan, is situated in a forest preserve at an average altitude of 1,550 meters above sea level. He dries his coffee for 15 days on raised beds using solar heated air.
When cupped this coffee tastes like: guava, melon, and other tropical fruit including papaya, pineapple and passionfruit. Terrific florals when hot, and some mild savory/herbal notes come out when it has cooled completely. Our cuppers were unanimously raving about this coffee!

Honduras wasn’t always the coffee powerhouse it’s known as now. Before the early 2000’s, the country was a considerable exporter of commercial-grade coffee. Honduras lagged its neighbors through the 1990’s as they developed strong specialty coffee markets; countries like Nicaragua and Guatemala produced higher-scoring coffees and were hosts to the Cup of Excellence program in 2001 and 2003 respectively. A government tax in the early 2000’s helped generate much-needed capital for infrastructure in coffee-producing regions, which helped transport coffee grown in fertile soils at higher altitudes to market. Today, more than 100,000 families are involved in coffee production, with the majority producing their coffee on farms smaller than two hectares.
Roasting and Shipping Schedule:
Coffee is roasted on Wednesdays. If you order anytime up until 11pm Tuesday, we will roast the next day and ship on Thursday. Orders received after 11pm Tuesday may not get roasted until the following week. If we have extra inventory, we will ship ASAP.
