A new washed Ethiopia - always cause for celebration! This is our third year purchasing Yabitu Koba and it is the last of our Ethiopian selections from the Dec 2020-Jan 2021 harvest. As is often the case with dense, washed Ethiopians (and really, in our experience, no other coffees), we have only seen improvements in cup quality as we have cupped samples of this coffee over the past few months. One of our cuppers gave the following notes: "very nice! Bergamot, orange, red fruits, red apple, cocoa, and peach." The other said "really good! Floral, sprite, pink lemonade." And that's really all that needs to be said. If you like great washed Ethiopian coffees, you'll love this. And if you aren't quite sure what's up with a coffee with these kinds of tasting notes, you're in for a real treat!

This coffee is roasted similarly to a "Nordic light" or "ultra-light" roast. It’s important to note that neither “standard light” nor “Nordic light” give any signs of roasty flavor, no matter how high you push your extractions. The only difference is that at a given extraction percentage, let’s say 22%, the Nordic light roast will have slightly more acidity and slightly less sweetness than the standard light roast. This can cause issues if you are equipment-limited to let’s say 20% extraction (like if you have a very cheap grinder). A Nordic light roast coffee may always taste underextracted (sour, vegetal) at that yield, whereas a standard light roast may give you enough sweetness to be an enjoyable brew.

"From deep in the forests of Guji comes Yabitu Koba Forest Coffee, bringing with it incredibly ripe red fruits, blazing acidity, and classic Ethiopian florals like bergamot and jasmine.

Believe it or not, the stellar coffees within this elevated (the highest in all of Ethiopia at 2310 masl), densely forested region in the Uraga woreda were once trucked across the border to Yirgacheffe and sold there as Yirgacheffe coffees because no one had yet recognized their distinct character.... 

... The coffees within Guji Uraga deserve their own differentiation. In the southernmost forest of the Uraga region lies the Ugo Begne forest and Yabitu Koba village, where the Hana Asrat washing station produces a truly singular coffee. Managed by lifelong coffee trader Feku Jebril (brother of Larcho Torka producer Abdi Jebril), Yabitu Koba coffee goes through a meticulous process: first, it passes through McKinnon depulpers, then moves into washing channels where it loses the rest of its mucilage. It moves into soaking tanks for another 12 hours overnight, and in the morning, it’s laid on drying beds for eight to ten days.

The next step is key to Yabitu Koba’s incredible shelf-life: after drying, the coffees move into the warehouse and rest for a week to condition and stabilize. After that, Feku and his team hand-sort through the parchment, selecting only the cleanest coffee. Because of its incredible potential, consistently realized through meticulous processing, this coffee not only comes in sparkling, it continues to bloom over the course of the year."

Roasting and Shipping Schedule:

Coffee is roasted on Wednesdays. If you order anytime up until 3pm Tuesday, we will roast and ship the next day. Orders received after 3pm Tuesday may not get roasted until the following week.
