We can't get enough of these coffees from Diego Samuel Bermudez Tapia! We've featured three of his coffees before ("Rosa Té," "CH-08," and "Road Trip") and we are thrilled to be offering another one. Surprisingly, this one is a washed process coffee, not double anaerobic, but it tastes very, very similar to Rosa Té and Road Trip, both of which were double anaerobic fermented coffees. It has absolutely electric acidity, like a very intense white wine. However, that acidity is balanced by tremendous strawberry lemonade sweetness, and there are some florals like rose as well. This coffee is SWEET! We are picking up hints of cotton candy and bubblegum too. 

Diego Samuel has done many experiments, varying the percentage of ripe and semi-ripe beans, the oxidation time, and then fermentation process/time. We had been under the assumption that these absolutely wild flavors were coming primarily from the double anaerobic fermentation but this coffee appears to tell us otherwise! Whatever the magic is, Diego Samuel has got it, and we could not be any happier to be offering another one of his simply incredible coffees to you.


The protocol for this coffee is as follows: 

"Castillo variety - #11 (Diego Samuel)

a. Collecting the cherry bean in a percentage of 92% ripe and 8% semi-ripe.
b. Floating and washing with ozone water to decrease microbial load.
c. 24 hours of oxidation in cherry state to extract chlorogenic acids.
d. Depulping in pulper machine.
e. Washing.
f. Controlled drying for 34 hours with recirculation of air in a regular temperature
of 35 Celsius degrees and relative humidity of 25% until reaching, in a scale of
10% to 11%.
g. Storage in hermetic bags to prevent deterioration of the living being (the bean)"

Roasting and Shipping Schedule:

Coffee is roasted on Wednesdays. If you order anytime up until 3pm Tuesday, we will roast and ship the next day. Orders received after 3pm Tuesday may not get roasted until the following week.
