Bright and tangy!! In a cupping bowl, we are tasting blood orange, cherry, sungold tomato, and sweet caramel. The tomato note is much less prominent than it is in some really tomato-ey Kenyans. There's a slight herbaceous character which is really beautiful; we often find that lower quality Colombians have this herbaceous character (it's really one of the classic characteristics of the Colombian terroir) but don't have enough sweetness and acidity to balance it. This lot is super bright and super sweet - we really can't emphasize enough how much we like this one.

This coffee is roasted similarly to a "Nordic light" or "ultra-light" roast. It’s important to note that neither “standard light” nor “Nordic light” give any signs of roasty flavor, no matter how high you push your extractions. The only difference is that at a given extraction percentage, let’s say 22%, the Nordic light roast will have slightly more acidity and slightly less sweetness than the standard light roast. This can cause issues if you are equipment-limited to let’s say 20% extraction (like if you have a very cheap grinder). A Nordic light roast coffee may always taste underextracted (sour, vegetal) at that yield, whereas a normal light roast may give you enough sweetness to be an enjoyable brew.

"Finca El Eden is located in Garzon, Huila, Colombia and run by Hugo Gonzalez. The farm sits at an elevation of approximately 1,850 m.a.s.l. and consists of 3 hectares in coffee. Of those 3 hectares, Hugo currently has 9,000 trees of Variedad Colombia, Caturra and Castillo in production. The coffee is de-pulped and then fermented for between 36 and 42 hours, mostly a dry ferment, but with some water in the tank. After washing, the coffee is dried on raised African beds in a parabolic dryer for anywhere from 20-30 days, depending on the weather conditions. We met Hugo through Alberto, our Head of Quality in the Huila Region, who also happens to be from Garzon and has known Hugo for years, working closely with him to help improve cup quality. In addition, Hugo is the President of a local association of growers called GAFRUCOL, whom we hope to start working closely with this year. This is our third year working with Hugo and we look forward to future harvests of his, as well as members of the association and as soon as the pandemic passes, the opportunity to finally visit him and the entire group."

    Roasting and Shipping Schedule:

    Coffee is roasted on Wednesdays. If you order anytime up until 3pm Tuesday, we will roast and ship the next day. Orders received after 3pm Tuesday may not get roasted until the following week.
